Tradition newly interpreted
Wine is created with us with commitment and love for detail. This attitude shapes every step – from the first vine pruning to bottling. We do not follow a rigid concept, but decide depending on the origin and vintage which path gives the wine the most expression. This results in both characterful site wines and cuvées from selected parcels of various Mosel steep slopes. Both are naturally part of our signature.
Paulessen and Hofpäsch are historical house and estate names of our family in Leiwen, passed down since the 17th century. With "Dajoar" – Mosel Franconian for "like in the old days" – we take up the way of winemaking as it was lived before: shaped by patience, manual labor, and trust in natural processes.
In the vineyard as well as in the cellar, we work carefully and with respect for tradition. All wines ferment spontaneously, without cultivated yeasts. Each parcel and each harvest day are processed individually so that origin and vintage remain unadulterated.
